Seven out of eight styles of Chinese cuisine (菜系)come from southern parts of China, which have different kinds of cooking methods.The dishes are put on the fine plates . There are a large number of ying dishes in South China with perfect colors, smells and tastes.

In Guangdong province for example, soup is an important part of Guangdong cuisine. It stress exquisite (精致的) preparations and provides enjoyment with well-chosen ingredients and beautiful presentation. Soup is usually stewed ()for several hours with vegetables or seafood rather than meat, and is often considered as the ying dish . It is said that soup should always be served first on the table with great expectations and people will comment after trying. A restaurant which is unable to provide satisfying soup is often considered a failure.
